Chinese Black Pepper Chicken with Noodles Recipe

A spicy black pepper chicken with strips of chicken breast marinated in five spices, soy and sesame oil, stir-fried with onions, red peppers, spring onions and cashew nuts, finished with Szechuan pepper, chilli, hoisin, wine and soy stir fry sauce.  Serve this deliciously spicy stir fry on a bed of egg noodles

Recipe Ingreds

Black pepper chicken

  • 1 whole bell pepper (red)
  • 2 tsp black pepper corns
  • 100 grams cashew nuts
  • 2 tsp chilli paste
  • 120 grams egg noodles
  • 1 whole fresh chilli
  • 2 cloves garlic
  • 2 tbsp hoisin sauce
  • 0.5 whole onions
  • 2 tbsp soy sauce
  • 1 whole spring onions
  • 45 ml white wine
  • 1 tbsp sunflower oil

pepper chicken marinade

  • 2 fillet chicken breasts
  • 0.5 tsp chinese five spice
  • 5 grams corn flour
  • 1 tsp sesame oil
  • 5 grams granulated sugar
  • 2 tbsp soy sauce
  • 1 tbsp sunflower oil

step 1

  • place the sunflower oil, sesame oil, sugar, chinese five spice, soy sauce, corn flour into the shallow dish

step 2

  • slice the chicken fillets into small strips or goujons
  • place the chicken in the marinade
  • cover with cling film
  • refrigerate for at least two hours preferably overnight

Step 3

  • Take the chicken out of the fridge
  • cut the onions in half and slice thinly
  • wash and chop the red pepper into matchsticks

Step 4

  • wash and finely chop the chilli
  • peel and chop the garlic
  • wash and finely slice the spring onions

Step 5

  • crush the pepper corns in a mortar and pestle
  • mix the chilli paste, hoisin sauce, soy sauce and white wine in a bowl

Step 6

  • half fill a medium pan with water and boil
  • add a spot of olive oil and a pinch of salt to the boiling water
  • Add the noodles to the hot water

Step 7

  • Heat 1/2 the oil to the wok
  • add the onions
  • add the peppers
  • cook for a minute or two

Step 8

  • move the veg to the side of the wok and add the other 1/2 of the oil to the wok
  • Add the chicken to the frying pan and fry from 4 to 5 minutes until golden brown

Step 9

  • Add crushed pepper
  • add the garlic and chopped chilli
  • cook for a minute or two
  • Add the sauce mixture and cook for a minute or two

Step 10

  • drain the noodles and wash, place back into the pan and warm through on a low light

Step 11

  • add the cashew nuts to the wok
  • cook for a minute or two

Step 12

  • place the noodles in individual serving dishes
  • place the stir fry on top
  • sprinkle with spring onions

  • 2 large knife
  • 1 medium pan
  • 1 mortar and pestle
  • 1 rectangular pie dish
  • 1 sieve
  • 1 small bowl
  • 1 wok

How to make Chinese black pepper chicken

Marinate the chicken breast strips in the Chinese five spice, sesame oil and soy sauce.  Slice the onions, peppers, and spring onions. chop the chilli and crush the garlic. Grind the peppercorns, and mix the chilli paste, hoisin, soy and white wine. Stir fry the onions and peppers move to the side of the wok and fry the chicken then add the fresh chilli, garlic, and black pepper, then the chilli paste sauce.  Finish the stir fry by adding the cashew nuts stir for a minute or two and then serve on a bed of noodles with a sprinkle of finely shredded spring onions

Cook chicken stir fry for dinner tonight

Perfect for a cold winter's night, If you are not a fan of noodles serve this spicy dish on a bed of brown or white rice. If you cutting down on the carbs add some chunky additional vegetables such as Pak Choy and eat on its own.
