A healthy chicken and vegetable stir fry, goujons of chicken, chilli and garlic, stir fried with cucumber, carrots, spring onions and bell peppers, all coated in a Chinese black bean sauce and served on a bed of noodles
Stirfry
Slice the carrots, spring onions, cucumber, celery, and peppers, and mix the black bean, soy sauce and wine together. Cook the noodles till
soft. Stir fry the chilli and garlic in
a wok add the strips of chicken, cook for a few minutes then add the carrots,
spring onions, cucumber, celery, and peppers. Then add sauce. Drain the
noodles, make a bed with the noodles, and place the chicken and vegetables on
top.
This dish can be eaten all year round, it makes the perfect
evening meal as it is quick to cook and ideal for a midweek meal, especially on
a busy work night. It is great if you are eating healthily as it is packed full
