About our North African Menu

This menu is inspired by traditional North African dishes and ingredients but with a modern twist.The starter is a spicy roast butternut soup, flavoured with chilli flakes, coriander, cumin, ginger and star anise. 

The main course is a chicken and tomato tagine served with lemon and coriander couscous. The tagine is spiced with a subtle blend of turmeric, cinnamon and ginger and sweetened with honey.The dessert is made with a soft chocolate and pistachio sponge, topped with a fresh orange whipped cream and finally coated in a dark chocolate and honey icing.

Difficulty level

This menu has an easy starter and main the dessert is slightly harder but still ok for beginners

Cooking Order

Day before    

  • make the chocolate cake and store in an air tight tin in a cool place
  • make the butternut soup allow to cool and store in the fridge
40 minutes before
  • prepare the chicken and place in the oven
5 minutes before 
  • heat the soup
5 minutes before the main course
  • add the honey to the tagine 
  • prepare the couscous

Top Tips

  • make sure the icing for the cake is easy to pour but not to warm

  • the chicken tagine once the honey is added to make sure it doesn’t burn
