Bacon and Tomato Pasta with Camembert Recipe

A simple camembert pasta with bacon and tomato,  al dente penne mixed with crispy bacon, served in a tomato, camembert and emmenthal sauce, flavoured with basil, garlic and chilli flakes. An ideal quick cook dinner

Recipe Ingreds


  • 60 grams bacon (smoked)
  • black pepper (to taste)
  • 25 grams camembert cheese
  • 0.5 tsp chilli flakes
  • 60 ml double cream
  • 25 grams emmenthal cheese
  • 4 sprig fresh basil
  • 1 cloves garlic
  • 1 tbsp olive oil
  • 25 grams parmesan or pecorino cheese
  • 150 grams penne pasta
  • salt (to taste)
  • caster sugar (to taste)
  • 1 tin tinned tomatoes small


  • 1 garlic bread

Recipe with pictures Steps

Step 1

  • set the oven to 200C 400F or gas mark 6
  • put the garlic bread on the baking tray and place in the oven follow cooking instructions on packaging

Step 2

  • half fill a pan with water and boil
  • add a spot of olive oil and a pinch of salt to the boiling water
  • add the pasta to the boiling water and cook until tender but with a slight bite

Step 3

  • heat the olive oil in the frying pan
  • chop the bacon into pieces
  • add the bacon to the pan
  • cook till crisp and golden brown

Step 4

  • peel and crush the garlic using the garlic crusher or chop finely add to the bacon
  • Add the chilli flakes, tomatoes, sugar to the bacon
  • cook for a minute or two
  • cook till sauce thickens to a jam like consistency

Step 5

  • cut the camembert into small cubes
  • grate the emmenthal cheese
  • add the cheeses and cream to the tomato and bacon mixture

Step 6

  • drain the pasta and add to the tomato, bacon and cheese mixture
  • if sauce is to tight add some pasta water to the sauce
  • taste and season with salt and pepper if necessary
  • wash and tear the basil leaves
  • add the basil to the sauce saving a little to sprinkle on the top

Step 7

  • remove the garlic bread from the oven

Step 8

  • share the tomato and bacon pasta equally between the serving bowls
  • serve with garlic bread, grated parmesan and a sprinkle of basil

How to make bacon, tomato and camembert pasta

Simply cook the pasta in boiling water till al dente, cook the bacon squares with crushed garlic, and chilli flakes, and the tomatoes and the sugar and cook till the sauce is a jam like consistency. Add the cheese and allow to melt, then add the cream and cook till it thickens a little. Add the pasta, and coat in the sauce

  • when you drain the pasta save the water and use to loosen the sauce if it gets to thick
  • Choose strong flavoured cheeses to balance the tomato and bacon
  • Sometimes tinned tomatoes can be a little tart if they are add a tiny bit of sugar to the sauce
