Easy beef stroganoff and white rice

Beef Stroganoff Recipe

A creamy beef stroganoff made with strips of sirloin or fillet steak and sliced mushrooms cooked in brandy and sour cream sauce, flavoured with paprika, served on a bed of white rice and sprinkled with freshly chopped parsley.

Recipe Ingreds

Beef Stroganoff

  • black pepper (to taste)
  • 2 tbsp brandy
  • 15 grams butter
  • 5 sprig fresh parsley
  • 2 cloves garlic
  • 2 tsp fresh lemon juice
  • 125 grams chestnut mushroom
  • 1 onions
  • 2 tsp paprika
  • salt (to taste)
  • 2 sirloin Steak
  • 45 ml sour cream
  • 2 tsp olive oil

Rice

  • 1 microwave white rice

Step 1

  • peel and crush the garlic
  • cut the steaks into thin strips
  • peel and chop the onion(s) finely

Step 2

  • heat the frying pan with the butter and a spot of oil
  • add the onions
  • cook till soft
  • add the garlic to the onions

Step 3

  • wash and slice the mushrooms
  • add the mushrooms to garlic and onions
  • shallow fry till golden brown
  • empty the contents of the frying pan on to a plate
  • set a side

Step 4

  • reheat the frying pan with a spot of oil, make sure its nice and hot
  • fry the steak in batches till sealed and golden brown, about 30 secs
  • return the steak to the pan
  • add the brandy and boil off the alcohol
  • add the paprika
  • cook for a minute or two

Step 5

  • squeeze the lemon(s) .
  • return the mushroom mixture to the frying pan
  • add the sour cream and lemon juice to the steak and mushroom mixture
  • heat gently

Step 6

  • wash and finely chop the fresh parsley
  • add the parsley saving a little for sprinkling over the stroganoff
  • cook for a minute or two
  • season with salt and pepper

Step 7

  • warm the precooked rice by following the instructions
  • place the rice in individual serving dishes

Step 8

  • place the stroganoff on top of the rice
  • Sprinkle with parsley
  • serve immediately

How to make beef stroganoff and rice

This dish requires a good quality beef steak either rump, sirloin, or rib eye. Cut the steak into strips, crush the garlic, and finely chop the onions. Fry the onions in butter till soft, add the crushed garlic, sliced mushrooms and cook till golden brown set a side. Add the beef steak strips to the pan, fry till just seared and coloured, then add the brandy boiling off the alcohol, add the paprika. Return the mushrooms to the pan and add the sour cream and lemon juice. Add the chopped parsley and cook for a minute or two.

Recipe Tips

  • Cook the beef strips in batches to avoid overcooking or “boiling” the meat
  • Do not fully cook the steak strips as they will cook further in the sauce just sear and colour the meat

This is the perfect quick midweek meal, in summer or winter, it is an expensive dish so maybe a treat rather than a everyday meal. You may want to save it for a romantic dinner or a Saturday night treat.

What is Stroganoff
