Spicy Chorizo and Potato Bake (Chorizo Tartiflette)

Chorizo and Potato Bake Recipe

This comforting traybake features layers of tender potatoes, vibrant broccoli, spicy chorizo, and a luscious cream sauce flavoured with a delicious blend of cheeses, all baked to golden perfection. Serve with a crisp tomato salad with mixed leaves, juicy cherry tomatoes, and crisp cucumber quarter, all dressed with  a honey, wholegrain mustard, olive oil, and red wine vinegar dressing.

Recipe Ingreds

Dressing

  • black pepper (to taste)
  • 1 tbsp honey
  • 2 tsp wholegrain mustard
  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar
  • salt (to taste)

Salad

  • 100 grams cherry tomatoes
  • 0.5 whole cucumber
  • 40 grams Salad leaves

Traybake

  • black pepper (to taste)
  • 100 ml double cream
  • 1 cloves garlic
  • 500 grams potatoes
  • salt (to taste)
  • 100 ml water (boiling)
  • 150 grams sliced chorizo
  • 60 grams brie cheese
  • 60 grams manchego cheese
  • 100 grams broccoli
  • 0.5 cube stock cube chicken

Step 1

  • peel the potatoes
  • slice the potatoes
  • add some boiling water to the pan
  • place the potatoes in the pan cook for 5 minutes
  • wash and cut the broccoli into florets
  • drain the potatoes
  • Add the broccoli to the water
  • cook for 5 mins and then drain set a side

Step 2

  • heat the frying pan and cook the slice of chorizo in batches
  • peel and crush the garlic and add to the frying pan
  • cook for 3 to 4 mins

Step 3

  • cut the brie into chunks add to a small pan
  • add the cream to the brie and heat to melt the cheese
  • add the stock cube to boiling water
  • add the stock to the pan and stir set a side

Step 4

  • grate the manchego cheese
  • grease an ovenproof dish
  • create layers starting with potato, add a little cream sauce with each layer
  • create a layer of broccoli next
  • create a layer of chorizo next
  • create a layer of cheese next
  • season with salt and pepper
  • repeat ending with a layer of potatoes
  • save a little manchego for the top

Step 5

  • place in the oven
  • cook for 20 mins

Step 6

  • remove from the oven
  • sprinkle with the saved cheese
  • return to the oven
  • cook for 10 mins
  • till golden browm

Step 7

  • wash mixed leaves and place in a serving bowl.
  • place a cross on the top of the cucumber
  • then slice the cucumber to form quarters
  • sprinkle over the salad leaves
  • wash the cherry tomatoes and then slice in half
  • sprinkle over the salad leaves

Step 8

  • mix the dressing ingredients together in a bowl

Step 9

  • Add a serving of the salad to the plate
  • remove the bake from the oven
  • add a portion to a serving plate
  • add the dressing to the salad

Ingredients for our Spanish chorizo and potato bake

Chorizo - the cured Spanish sausage is essential for the flavours of this dish, but because of the strong taste use thinly sliced sausage. 

Potatoes - use any potatoes including new potatoes 

cheese- use a soft continental cheese like brie or camembert for the cream sauce we use brie, use a hard flavourful hard cheese we use manchego but you can use any cheddar 

broccoli - use any form of broccoli or broccolini
