Mexican Sopapilla Cheesecake Recipe

Sopapilla cheesecake is a cinnamon and honey-flavoured cheesecake that is so easy to make,  it has a croissant dough base topped with a sweet cream cheese and vanilla filling. The cheesecake is topped with another layer of croissant dough and sprinkled with cinnamon sugar and a drizzle of honey and baked till golden brown and the sugar has formed a crunchy topping

Recipe Ingreds

Cheesecake

  • 115 grams butter
  • 1 tsp cinnamon
  • 500 grams cream cheese
  • 1 packet croissant dough
  • 5 tbsp honey
  • 225 grams caster sugar
  • 150 grams light brown sugar
  • 1 tsp vanilla extract

Step 1

  • set the oven to 180C 350F or gas mark 4
  • grease the baking dish
  • whisk the cream cheese, caster sugar and vanilla together in a bowl with the hand mixer

Step 2

  • unroll the dough and cut to create two layers of pastry to fit into the dish
  • place one of the doughs on the base of the baking dish
  • Add the cream cheese mixture
  • place the other dough over the top

Step 3

  • mix the butter, brown sugar and cinnamon together
  • place small dots of the cinnamon mixture on the top of the dough
  • place in the oven
  • cook for 30 mins

Step 4

  • remove from the oven
  • drizzle with half the honey
  • allow to cool and then refrigerate

Step 5

  • serve a slice of cheesecake
  • drizzle with the remaining honey

How to make sopapilla cheesecake

Grease a baking dish, Whisk together the cream cheese, caster sugar and vanilla. Unroll the croissant dough and cut it into two layers, place one layer in the bottom of the baking dish. Spread the creamy cheese filling over the dough, and place the remaining layer of dough on top.  Mix the butter cinnamon and sugar together and dot it in small amounts on the cheesecake, bake in the oven until golden brown and the butter and sugar has formed a crunchy golden topping. Once the cheesecake is baked drizzle with honey and allow to cool in the refrigerator, then serve drizzled with warm honey.

When and how to serve cinnamon and honey sopapilla

This is the perfect dessert it is so simple to make and is absolutely delicious, it makes the ideal dessert for a Spanish or Mexican dinner party feel free to tweak the flavours in the cheese filling to add your own twist or add some fresh fruit to cut through the sweetness. You can eat it cold or eat it slightly warm with fruity ice cream. Cut into bars and served cold it would make a great addition to an afternoon tea.

What is sopapilla

It is traditionally a Mexican dessert, it is made of leavened wheat dough with butter added. The dough is then deep-fried and lightly coated in cinnamon sugar. Our cheesecake uses the concept of the traditional recipe, for the top and bottom of the cheesecake, but the middle is filled with a delicious vanilla cheese filling.

Top tips

  • If you don't have croissant dough you can make this dish with puff pastry 
  • If you want a crisper version of this recipe make it with tortilla, brush the tortilla liberally with melted butter 
  • If it's too sweet for you add some fruit, blueberries, strawberries and raspberries work well
  • Try different flavoured honey to add an extra twist
