Spicy Cajun Chicken Salad Recipe

A delicious Cajun chicken salad, chicken breast coated in Cajun spices and cooked till golden brown served with a creole salad of lettuce, watercress, black beans, sweetcorn and tomato coated in a spicy mustard and oregano dressing

Recipe Ingreds

Chicken

  • 2 tbsp cajun seasoning
  • 2 fillet chicken breasts

Salad

  • 0.5 tin tinned black beans
  • 75 grams cherry tomatoes
  • 40 grams Salad leaves
  • 0.5 tin tinned sweetcorn
  • 40 grams watercress

Dressing

  • black pepper (to taste)
  • 0.5 tsp oregano (dried)
  • 1 cloves garlic
  • 1 tsp fresh lemon juice
  • 1 tsp mustard
  • 2 tbsp olive oil
  • salt (to taste)
  • 4 drops tabasco sauce
  • 1 tbsp white wine vinegar

Step 1

  • place the cajun spices on some cling film
  • coat the chicken in cajun spices
  • bash the chicken to flatten slightly

Step 2

  • oil the griddle pan
  • heat the griddle pan
  • Add the chicken
  • cook for 5 minutes
  • turn the chicken over
  • cook for 5 minutes
  • cook till the juices run clear
  • while the chicken is cooking

Step 3

  • squeeze the lemon(s) .
  • peel and crush the garlic using the garlic crusher or chop finely
  • mix the dressing ingredients together in a bowl

Step 4

  • place the lettuce leaves in a bowl
  • add the watercress to the bowl

Step 5

  • Drain and rinse the beans
  • add to the bowl

Step 6

  • drain the corn
  • add to the bowl

Step 7

  • wash and cut the tomatoes into quarters
  • add to the bowl
  • add the dressing to the salad
  • toss the salad
  • place the salad in a serving bowl

Step 8

  • slice the chicken diagonally
  • lay the chicken over the salad
  • serve immediately

  • 1 squeezer

How to make Cajun chicken salad

Coat the chicken in the Cajun spices, and flatten slightly with a rolling pin, then griddle the chicken until golden brown and cooked till the juices run clear. While the chicken is cooking make the marinade for the salad by adding the oregano, crushed garlic, lemon juice, mustard olive oil, vinegar and tabasco. Make the salad by placing the salad leaves, and watercress, drained black beans, sweetcorn and halved cherry tomatoes in a bowl and mix. When the chicken is cooked slice it add the salad dressing to the salad and serve the salad in a bowl with the sliced chicken on the top
