Apple and vanilla custard tart Recipe

A sweet apple and custard tart, short crust pastry filled with a homemade vanilla custard and topped with caramelized honey sliced apples and an apricot jam glaze serve this irresistible apple flan with a dollop of freshly whipped cream or ice-cream

Recipe Ingreds

Pastry

  • 135 grams butter
  • 1 egg (yolk)
  • 175 grams plain flour
  • salt (to taste)
  • 25 grams self raising flour
  • 50 grams caster sugar
  • 0.5 tsp vanilla extract
  • 15 ml water
  • 1 tbsp apricot jam
  • 10 grams icing sugar

Filling

  • 6 whole eating apples
  • 30 grams butter
  • 175 ml double cream
  • 2 whole egg
  • 3 whole egg (yolk)
  • 2 tbsp honey
  • 175 ml milk
  • 100 grams caster sugar
  • 0.5 tsp vanilla extract
  • 25 grams corn flour
  • 200 ml single cream

Step 1

  • sieve together the flours and salt
  • cut the butter into cubes

Step 2

  • mix together the egg yolks water and vanilla extract
  • add the sugar to the egg yolk mix together

Step 3

  • mix the flour and butter, blend until the contents forms a crumb, by hand or using a food processor
  • if using a food processor empty the contents of the food processor into a large bowl
  • add the egg mixture
  • mix using a few swift movements
  • form a ball and flatten
  • place the pastry ball in a plastic bag
  • place in the fridge to cool

Step 4

  • set the oven to 165C 365F or gas mark 3
  • remove the pastry from the fridge
  • lightly dust a clean work surface with flour
  • roll out the pastry into a circle to fit the flan dishes
  • fit pastry into flan dish
  • trim the pastry to fit the flan dish
  • place in the fridge to cool
  • for 15 minutes

Step 5

  • peel and core the apples
  • thinly slice the apple

Step 6

  • melt the honey in the frying pan
  • add the butter to the frying pan
  • add the apples
  • cook till soft but maintaining the shape
  • set a side to cool

Step 7

  • remove the pastry from the fridge
  • bake the pastry blind by covering the pastry with grease proof paper and baking beans
  • bake for 20 mins
  • while the pastry is cooking

Step 8

  • whisk the eggs, egg yolks, sugar and corn flour in a bowl till smooth

Step 9

  • heat the milk and cream in a pan, till just below boiling point
  • pour the cream into the eggs whisking all the time

Step 10

  • When the egg and cream mixture is fully combined place in a clean pan and return to the heat
  • whisk until the custard thickens remove from the heat as it thickens and continue to whisk
  • add the vanilla extract
  • place in a bowl
  • set a side to cool
  • place some clingfilm directly on the custard to stop it forming a skin

Step 11

  • remove the tart from the oven
  • remove the beans and paper
  • return to the oven
  • bake for 8 to 10 mins or till golden brown
  • remove from the oven
  • set a side
  • Allow to cool a little

Step 12

  • set the oven to 180C 350F or gas mark 4
  • When cool add the custard to the tart
  • place the sliced apples neatly on the tart

Step 13

  • melt the jam in a pan or in microwave in a bowl
  • coat the top of the pudding with jam
  • Dust with icing sugar
  • place in the oven
  • cook for 8 minutes, till the top is caramelised

Step 14

  • cut a slice and serve with single pouring cream

how to make apple custard tart 

This delicious dessert is a twist on traditional french apple tart but we have given it a bit more of an English twist. The tart has a soft pie like pastry, and the custard layer is thicker than a traditional french apple tart. The apples are sweet and are precooked in honey to give them a subtle English summer flavouring.
