Beef & Black Olive Burgers with Courgette Chips Recipe

A chunky beef burger made from minced beef and flavoured with chopped olives, crushed garlic, ground cumin, tomato paste and torn basil served in a crusty ciabatta rolls with lettuce,  fried onions and tomato sauce. The burger is served with oven baked parmesan courgette chips and garlic mayo

Recipe Ingreds

Chips

  • black pepper (to taste)
  • 90 grams bread crumbs
  • 1 whole courgette
  • 1 whole egg
  • 2 tbsp olive oil
  • 10 grams parmesan or pecorino cheese
  • salt (to taste)
  • 20 grams plain flour

Burger

  • 30 grams black olives
  • black pepper (to taste)
  • 2 rolls ciabatta rolls
  • 3 sprig fresh basil
  • 1 cloves garlic
  • 0.5 tsp ground cumin
  • 250 grams mince beef
  • 2 tbsp olive oil
  • 1 whole onions
  • salt (to taste)
  • 0.75 tbsp tomato puree
  • 5 grams lettuce
  • 1 tbsp tomato sauce

garlic mayo

  • 1 tbsp mayonnaise light
  • 1 cloves garlic
  • 30 ml sour cream

Recipe with pictures Steps

Step 1

  • add the mince beef to a bowl
  • chop the olives and add to the bowl

Step 2

  • wash and tear the basil leaves
  • peel and crush the garlic using the garlic crusher or chop finely
  • add the garlic and basil to the mince meat

Step 3

  • add the cumin to the mince
  • add the tomato puree to the mince
  • season with salt and pepper
  • stir to mix the ingredients
  • take a large spoonful of the mixture and with damp hands shape the mixture into burgers
  • make a burger for each person.

Step 4

  • Cover in cling film and Place in the fridge to cool for 10 minutes
  • if your making extra for another day, place the extra burgers on a tray covered in cling film and place in the freezer to freeze

Step 5

  • set the oven to 190C 375F or gas mark 5
  • wash the courgettes chop into chip shapes

Step 6

  • place the flour on a plate
  • place the breadcrumbs on a plate
  • grate the parmesan onto the breadcrumb plate and mix the breadcrumbs and parmesan together with salt and pepper

Step 7

  • break the egg(s) into the shallow bowl and beat with a fork
  • season with salt and pepper

Step 8

  • pour half olive oil onto the baking tray and half into a cup
  • organise the breading ingredients into a row with the flour first , then the egg and finally the breadcrumbs.

Step 9

  • dip the courgette chip into the flour
  • then dip the courgette chip into egg
  • then dip the courgette chip into the breadcrumbs and parmesan coat the courgette chip fully
  • place the crumbed courgette chip onto the oiled baking tray and dab the courgette with oil from the cup using a pastry brush
  • repeat for each courgette chip.
  • place in the oven
  • bake for 10 minutes turning once part way through cooking

Step 10

  • peel and crush the garlic using the garlic crusher or chop finely
  • add the garlic to the bowl
  • add the mayo and sour cream and stir
  • set a side

Step 11

  • Remove the burgers from the fridge and place in a frying pan with half the oil
  • heat the second frying pan, chop the onions into rings and fry in the second frying pan with the remaining oil

Step 12

  • cook the burgers for about 4 mins each side
  • cook the onions till soft

Step 13

  • switch the grill on
  • and cut the ciabatta rolls in half
  • lightly toast

Step 14

  • remove courgette chips from the oven

Step 15

  • add the lettuce to the roll
  • Lay the burger on top of the ciabatta roll
  • add the cooked onions
  • top with tomato sauce
  • serve with the parmesan chips
  • and the mayo on the side

About our homemade Mediterranean beef burger recipe 

These mouth watering burgers are made from minced beef mixed with some the traditional flavours of the Mediterranean, olives, garlic, cumin, tomato and basil. The burger is served in an Italian ciabatta roll with lettuce, fried onions and tomato sauce. We have paired our burger with one of our favourite chips, courgette Parmesan chips . These chips take a little time to make but are worth the effort. Courgette chips are courgettes cut into chips and coated in flour, breadcrumbs and grated Parmesan. This chips are then oven baked till they are golden and crisp. This meal is completed with an added indulgence garlic mayo. 

Make Mediterranean burgers for dinner tonight

Burgers are perfect for winter served with either our crunchy parmesan courgette chips or if you are in a hurry serve with frozen chips. In the summer cook our burgers on the barbecue and serve with a fresh summer salad and coleslaw.
