Greek Herb Pilaf with Prawn and Feta Recipe

A Greek Prawn pilaf made with tomato, black olive, onions, feta and herb topped with fried prawns cooked in lemon juice

Recipe Ingreds

Rice

  • 30 grams black olives
  • black pepper (to taste)
  • 15 grams butter
  • 35 grams feta cheese
  • 6 sprig fresh dill
  • 6 sprig fresh flat parsley
  • 4 sprig fresh mint
  • 1 cloves garlic
  • 1 tbsp olive oil
  • 0.5 whole onions
  • 125 grams basmati rice
  • salt (to taste)
  • 0.25 cube stock cube chicken
  • 3 whole tomatoes
  • 200 ml water

Prawns

  • black pepper (to taste)
  • 1 whole lemon
  • 1 tbsp olive oil
  • 175 grams prawns (raw)
  • salt (to taste)

Recipe with pictures Steps

Step 1

  • place the rice in a sieve and wash the rice
  • peel and chop the onion(s) finely
  • heat the frying pan
  • add the olive oil and butter
  • Add the onions to the frying pan and cook until soft

Step 2

  • peel and crush the garlic using the garlic crusher or chop finely
  • add to the frying pan
  • wash and chop the tomatoes
  • add to the frying pan
  • cook till soft

Step 3

  • wash and finely chop the herbs
  • add the stock cube to boiling water

Step 4

  • add the rice to the frying pan
  • add half the herbs
  • add the stock
  • Bring to the boil and boil for a few minutes
  • until the rice puffs and the liquid can't be seen
  • turn down the heat cook gently
  • wrap a clean towel around the frying pan lid. Place the lid on the frying pan
  • cook for 10 mins

Step 5

  • chop the olives

Step 6

  • heat the olive oil in a pan
  • quickly fry the prawns
  • season with salt and pepper
  • cut the lemons into wedges
  • squeeze a couple of lemon wedges over the prawns to taste

Step 7

  • when the rice is done
  • taste and season with salt and pepper if necessary

Step 8

  • remove the rice from the heat
  • add the olives
  • add the remaining herbs
  • Add the prawns
  • squeeze a couple of lemon wedges over the rice
  • leave for 5 minutes

Step 9

  • crumble the cheese over the top
  • drizzle with olive oil
  • serve with lemon wedges

The raw rice is added to the tomatoes with the herbs and stock. The rice is gently cooked till soft. The prawns are cooked and flavoured with lemon, The olives, feta and prawns are added to the pilaf just before it is served
