Lamb and Ale Stew with Bubble and Squeak Patties Recipe

A rich lamb stew cooked with mushrooms, carrots and parsnips and a rich ale gravy. This delicious stew is served with shallow fried bubble and squeak patties made with potato, cabbage, bacon and onions. The perfect evening meal for a cold winters night.

Recipe Ingreds

Stew

  • 600 ml abbots ale
  • black pepper (to taste)
  • 1 whole carrots
  • 300 grams chestnut mushrooms
  • 4 sprig fresh parsley
  • 3 sprig fresh rosemary
  • 2 cloves garlic
  • 400 grams lamb diced
  • 1 whole parsnips
  • 15 grams pearl barley
  • 10 grams plain flour
  • 1 whole red onions
  • salt (to taste)
  • 0.25 cube stock cube beef
  • 2 tbsp sunflower oil
  • 250 ml water (boiling)
  • 1 tsp yeast extract

Potatoes

  • 70 grams bacon (smoked)
  • black pepper (to taste)
  • 125 grams green cabbage
  • 3 sprig fresh parsley
  • 2 cloves garlic
  • 400 grams potatoes
  • 1 whole red onions
  • salt (to taste)
  • 1 . sunflower oils (for frying)
  • 20 grams plain flour

Recipe with pictures Steps

Step 1

  • place the lamb in the bowl
  • season with salt and pepper
  • wash and finely chop the fresh rosemary
  • add to the bowl
  • add the flour to the bowl
  • mix the ingredients

Step 2

  • peel and slice the carrots
  • peel and slice the parsnips
  • peel and finely slice the onion(s)
  • wash and slice the mushrooms
  • add the stock cube to boiling water

Step 3

  • heat the oil in the frying pan
  • cook the lamb in batches cook till golden brown
  • add to a casserole dish

Step 4

  • add the onions to the frying pan
  • cook till soft
  • peel and crush the garlic using the garlic crusher or chop finely
  • add to the frying pan

Step 5

  • add the mushrooms to the frying pan
  • cook till golden brown
  • add the parsnips and carrots
  • cook for 5 minutes
  • add the yeast extract, pearl barley, ale and stock
  • to the frying pan

Step 6

  • set the oven to 165C 365F or gas mark 3
  • return the meat to the pan
  • cook for 10 mins
  • add the contents of the frying pan to the casserole dish

Step 7

  • wash and finely chop the fresh parsley
  • add to the casserole dish
  • season with salt and pepper
  • place the stew in the oven
  • cook for 2 and half hours or until the meat falls apart

Step 8

  • half fill a pan with water and boil
  • peel and cut the potatoes into cubes
  • add the potatoes to the pan
  • cook for 10 mins to 15 mins
  • cook till soft

Step 9

  • remove the potatoes from the pan with a slotted spoon leaving the water in the pan. Place the potatoes in a dish
  • mash roughly with a fork
  • wash and chop the cabbage into fine strips
  • add the cabbage to the potato water in the pan
  • cook for 3 to 4 mins
  • drain the cabbage using the sieve and add to the potatoes
  • mix the cabbage and potatoes together

Step 10

  • heat the frying pan
  • chop the bacon into pieces
  • add the bacon to the frying pan
  • cook till golden brown
  • Drain and set a side

Step 11

  • peel and finely slice the onion(s)
  • add to the frying pan
  • peel and finely chop the garlic
  • add to the frying pan

Step 12

  • wash and finely chop the fresh parsley
  • add the bacon onions parsley and garlic to the potatoes
  • season with salt and pepper
  • make the patties
  • take a large spoonful of the mixture and with damp hands shape the mixture into a pattie
  • place the flour on a plate
  • coat the patties in flour
  • set a side to rest
  • if cooking extra for the freezer store the extra patties in a freezable container allow to cool and then place in freezer

Step 13

  • 10 minutes before the stew is ready
  • heat the frying pan
  • heat about 21/2 cms of frying oil in a frying pan
  • Drop a breadcrumb into the oil to check its hot enough it should fizzle
  • add the patties to the pan in batches

Step 14

  • cook the patties till golden brown on both sides
  • Drain on kitchen paper
  • keep warm in the oven

Step 15

  • remove the stew from the oven
  • if cooking extra for the freezer store the extra stew in a freezable container allow to cool and then place in freezer
  • serve the stew with the potato patties
  • serve immediately
