Pasta with Courgette Sauce & Spinach Balls Recipe

A tasty courgette pasta with crunchy spinach balls, pasta coated in a courgette, garlic and chilli sauce, served with Carluccio's spinach balls flavoured with parmesan, garlic and nutmeg. 

Recipe Ingreds

Balls

  • black pepper (to taste)
  • 1 whole egg
  • 1 cloves garlic
  • 0.25 tsp ground nutmeg
  • 25 grams parmesan or pecorino cheese
  • salt (to taste)
  • 1 slices brown bread
  • 250 grams Spinach
  • 1 . sunflower oil (for frying)

Pasta

  • black pepper (to taste)
  • 2 whole courgette
  • 1 whole fresh chilli
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 30 grams parmesan or pecorino cheese
  • 150 grams penne pasta
  • salt (to taste)

Bread

  • 1 stick garlic bread

Recipe with pictures Steps

Step 1

  • wash the spinach
  • remove the stalks
  • wilt the spinach in a pan
  • cook for a minute or two

Step 2

  • remove from the heat
  • squeeze as much liquid as possible from the spinach
  • chop the spinach finely
  • add to the bowl
  • add the spices

Step 3

  • peel and crush the garlic using the garlic crusher or chop finely
  • add to the bowl
  • using a food processor blend the bread into fresh breadcrumbs
  • add to the bowl

Step 4

  • finely grate the parmesan
  • add to the spinach mixture
  • stir to mix the ingredients
  • season with salt and pepper

Step 5

  • add the egg(s) to a bowl
  • beat the egg
  • add the egg to the spinach and stir
  • the mixture should be a binding consistency
  • if the mixture is to wet add additional breadcrumbs

Step 6

  • set the oven to 220C 425F or gas mark 7

Step 7

  • half fill a medium pan with water and boil
  • add a spot of olive oil and a pinch of salt to the boiling water
  • add the pasta to the boiling water and cook until tender but with a slight bite
  • while the pasta is cooking

Step 8

  • roll the spinach mixture into walnut size balls
  • heat about 2 cms of frying oil in a frying pan
  • shallow fry till golden brown
  • place on kitchen paper
  • keep warm

Step 9

  • put the garlic bread on the baking tray and place in the oven follow cooking instructions on packaging

Step 10

  • heat the oil in the frying pan
  • wash and finely chop the chilli
  • add to the frying pan
  • cook for a minute or two
  • peel and crush the garlic using the garlic crusher or chop finely
  • add the garlic to the frying pan

Step 11

  • wash trim and grate the courgette
  • add to the frying pan

Step 12

  • finely grate the parmesan
  • add to the frying pan
  • taste and season with salt and pepper if necessary

Step 13

  • reserve a few tbsps of cooking liquid from the pasta
  • drain the pasta
  • add some of the reserved pasta liquid to the courgette mixture to make a thick sauce

Step 14

  • remove garlic bread from the oven

Step 15

  • place the pasta in a serving bowl
  • place the spinach balls on top of the pasta
  • serve with garlic bread

How to make courgette pasta with Carluccio's spinach balls

This refreshing pasta dish is easy to prepare and taste delicious, we have added Antonio Carluccio's spinach balls for extra taste and a crispy crunch. The penne pasta is cooked al dente and added to grated courgette mixed with garlic, chilli and grated parmesan. The pasta is topped with the crispy spinach balls, made from wilted spinach and breadcrumbs flavoured with  garlic, nutmeg and parmesan and shallow fried.
