Chilli Pork Stir-fry Recipe

A delicious Chinese chilli pork stir fry, pork fillet marinated in wine, sesame oil, chilli flakes, soy and hoisin sauce, and stir-fried with spring onions and peanuts served on a bed of jasmine rice

Recipe Ingreds

Marinade

  • 2 tsp sesame oil
  • 1 tbsp soy sauce
  • 1 tbsp rice wine
  • 0.5 tbsp hoisin sauce
  • 2 tsp chilli flakes
  • 400 grams pork tenderloin (fillet)

Rice

  • 1 packet microwave jasmine rice

stirfry

  • salt (to taste)
  • black pepper (to taste)
  • 2 cloves garlic
  • 1 tbsp soy sauce
  • 6 whole spring onions
  • 2 whole Red chilli
  • 5 grams granulated sugar
  • 15 grams salted peanuts
  • 1 tbsp sunflower oil

Step 1

  • place the sesame oil, soy sauce, rice wine, hoisin sauce and chilli flakes into a shallow dish
  • stir to mix the ingredients

Step 2

  • slice the pork fillet at angle into thin slices
  • place the pork in the marinade
  • stir to ensure that the pork is covered in marinade
  • cover with cling film
  • refrigerate for at least two hours preferably overnight

Step 3

  • remove the pork from the fridge

Step 4

  • wash and finely chop the chilli
  • peel and chop the garlic
  • wash and finely slice the spring onions
  • chop the peanuts

Step 5

  • heat half the oil in the wok
  • add half the pork to the wok
  • cook for a minute or two
  • remove from the wok
  • add the remaining pork to the wok
  • cook for a minute or two
  • remove from the wok

Step 6

  • Heat the remaining oil in the wok
  • add the onions to the wok
  • cook for a minute or two
  • add the garlic and chopped chilli
  • cook for a minute or two

Step 7

  • return the pork to the wok
  • add the soy sauce and sugar to the wok
  • cook for a minute or two
  • season with salt and pepper

  • warm the precooked rice by following the instructions
  • place one serving of rice onto a plate

  • place the stir fry on top
  • sprinkle with chopped nuts

This delicious pork stir fry is made by marinating the pork in wine, sesame chilli soy and hoisin, then stir-fried with spring onions, garlic and chilli and finished with a shot of soy sauce. To make this dish, make a marinade for the pork by mixing wine, sesame oil, chilli flakes, soy and hoisin sauce. Use pork tenderloin (fillet) as this is the best pork cut for a stir fry, cut the pork into strips and place it in the marinade for at least two hours. Stir fry the pork in a wok with spring onions, garlic and chilli, when the pork is cooked glaze the dish with a dark soy sauce.
