Spanish Chorizo, Potato & Manchego cheese Tortilla with salad

Chorizo, Red pepper and Manchego Tortilla Recipe

A delicious Spanish chorizo, potato and manchego tortilla made with crispy chorizo, crunchy red pepper, red onions and soft slices of potatoes flavoured with manchego cheese, garlic, paprika and parsley served with a green salad



Recipe Ingreds

Tortilla

  • 1 bell pepper (red)
  • black pepper (to taste)
  • 75 grams chorizo
  • 3 egg
  • 3 sprig fresh parsley
  • 2 cloves garlic
  • 75 grams manchego cheese
  • 2 baking potatoes
  • 0.5 red onions
  • salt (to taste)
  • 0.5 tsp smoked paprika
  • 1 tbsp olive oil

Salad

  • 100 grams cherry tomatoes
  • 0.5 cucumber
  • 40 grams Salad leaves

Step 1

  • slice the red onions thinly
  • wash and slice the peppers into strips
  • peel and thinly slice the potatoes
  • chop the chorizo into cubes
  • peel and crush the garlic using the garlic crusher or chop finely

Step 2

  • heat half the oil in the frying pan
  • add the onions, potatoes peppers and garlic to the frying pan
  • cook till potatoes are soft
  • Approx 15 mins

Step 3

  • add the eggs to a small bowl and beat
  • add the paprika
  • season with salt and pepper
  • mix the ingredients

Step 4

  • grate the cheese
  • wash and finely chop the fresh parsley

Step 5

  • add the chorizo to the pan fry till crisp

Step 6

  • empty the contents of the frying pan into a bowl
  • add the eggs, cheese and parsley to the bowl

Step 7

  • heat the remaining oil in the frying pan
  • switch the grill on

Step 8

  • add the contents of the bowl to the frying pan
  • cook for 3 to 4 mins until the egg has set
  • remove the frying pan from the heat and place under the grill
  • cook till crisp and golden brown

Step 9

  • wash mixed leaves and place in a serving bowl.
  • place a cross on the top of the cucumber
  • then slice the cucumber to form quarters
  • sprinkle over the salad leaves
  • wash the cherry tomatoes and then slice in half
  • sprinkle over the salad leaves

Step 10

  • cut the tortilla into slices
  • serve immediately

  • serve with salad

How to make a Spanish tortilla with chorizo and manchego

Slice the potatoes, peppers, onions and chorizo, fry in a frying pan with crushed garlic till the vegetables are soft allow to cool a little. Beat the eggs in a bowl with the paprika, add the contents of the frying pan into the eggs with the chopped parsley, and grated cheese and mix. Add the egg mixture to the frying pan, cook till the eggs are set and then brown under the grill.
