Gammon Pasta with Leeks and Spring Onions Recipe

A creamy gammon pasta made with, crispy squares of gammon, chopped leeks and spring onions all coated in a thyme, garlic and parmesan cream sauce. Serve this delicious gammon and leek pasta with crusty bread or a crunchy garlic baguette

Recipe Ingreds

Pasta

  • black pepper (to taste)
  • 10 grams butter
  • 4 sprig fresh thyme
  • 1 whole gammon steaks
  • 1 whole leeks
  • 25 grams parmesan or pecorino cheese
  • 150 grams penne pasta
  • salt (to taste)
  • 150 ml single cream
  • 2 whole spring onions
  • 0.25 tbsp olive oil
  • 1 cloves garlic

Bread

  • 1 stick garlic bread

Step 1

  • set the oven to 180C 350F or gas mark 4
  • half fill a medium pan with water and boil
  • add the pasta to the boiling water and cook until tender but with a slight bite

Step 2

  • cut the gammon into squares

Step 3

  • heat the frying pan with a little oil
  • fry the gammon till crisp remove from the frying pan and set a side to keep warm

Step 4

  • put the garlic bread on the baking tray and place in the oven follow cooking instructions on packaging

Step 5

  • heat the frying pan
  • cut the butter into cubes add to the frying pan
  • wash and finely slice the leeks
  • add to the frying pan
  • wash and finely slice the spring onions
  • add to the frying pan
  • cook till soft

Step 6

  • peel and crush the garlic using the garlic crusher or chop finely
  • add to the frying pan
  • cook for a minute or two
  • Add the cream
  • mix the ingredients
  • heat through until the sauce thickens

Step 7

  • grate the cheese
  • add the cheese to the frying pan
  • add the gammon
  • season with salt and pepper

Step 8

  • drain the pasta and add to the gammon mixture
  • return to the heat and gently warm through
  • cook for 3 to 4 mins

Step 9

  • place the pasta on a serving plate
  • sprinkle with thyme

Step 10

  • remove garlic bread from the oven
  • serve the garlic bread with the pasta

How to make our creamy pasta with gammon 

Crisp gammon squares and soft pasta cooked in an creamy leek sauce ideal for a quick after work dinner on those busy nights. To make this dish cook the pasta till al dente, cut the gammon into squares and cook till crisp place on a plate and set aside. Chop the leeks and spring onions add to the frying pan and cook till soft, Crush the garlic and add to the pan cook for a minute or two. Add the cream and cook till the sauce thickens a little. Add the gammon and grated parmesan, mix and season with salt and pepper. Add the cooked pasta to the frying pan if the sauce is a little thick add a touch of the pasta water. Sprinkle with thyme leaves and serve.
